Starter:
Truffle roulade chicken cobb salad

Fish:
Seared fillet of sea bass with pea risotto cockle jus, pea and dill salsa with a Parmesan crisp

Main:
Wagu fillet served pink with bone marrow pomme purée, wild mushroom ragú , confit carrots burnt broccoli paste and beetroot crisps and pan gravy

Sweet:
Lotus flower ice cream and lemon cake served with lotus and honeycomb crumble with lotus cream
