In the heart of the Dehesa de Campoamor, on the sunny coast of Spain, a new restaurant has opened its doors, ready to delight palates with an authentic Italian culinary experience. The restaurant is called “Ahò”, a name that echoes the love for Rome, the city that gave birth to its history.
Behind this corner of Italy far from home there is a family that carries in its heart and hands the memory of a profession that has been passed down from generation to generation.
The owner, a true Roman, was born and raised in the San Giovanni neighborhood, a place that for years has been the cradle of his family’s culinary tradition. His adventure in the kitchen began when, as a child, he ran between his grandparents’ legs in the small family shop that since 1946, in the heart of Rome, served its fellow citizens with dishes rich in history and love. A company that has evolved over time, passing into the hands of children and then grandchildren, while maintaining the essence of that authentic and unforgettable Rome.
When he decided to move to Spain, he couldn’t help but bring his family’s knowledge with him. The idea for “Ahò” was born from the need to pass on to others the same passion that animated his grandfather, that deep bond between Roman gastronomic traditions and the innovation that the modern era required.
The menu at “Ahò” is a meeting between the past and the future. The dishes are a tribute to family recipes, those that grandfather cooked with hands dirty with flour and a heart full of love. But, at the same time, the restaurant wants to offer something new, an evolution of taste that never forgets its roots, but that pushes towards new interpretations, with a contemporary touch, but also reinterpreted
There is homemade pasta, of course, but also reinterpreted with fresh and local ingredients, which marry perfectly with the idea of a culinary art that looks forward without ever losing sight of tradition.
Each dish tells a story, like the “Cacio e Pepe” which, despite its simplicity, represents the heart of Rome, but with a modern presentation that plays with textures and aromas, to give the dish a new sensory dimension. En el corazón de la Dehesa de Campoamor, en la soleada costa española, ha abierto sus puertas un nuevo restaurante, listo para deleitar paladares con una auténtica experiencia culinaria italiana. El restaurante se llama «Ahò», un nombre que evoca el amor por Roma, la ciudad que vio nacer su historia.
Detrás de este rincón de Italia, lejos de casa, hay una familia que lleva en su corazón y en sus manos el recuerdo de una profesión que se ha transmitido de generación en generación.
El propietario, un auténtico romano, nació y creció en el barrio de San Giovanni, cuna de la tradición culinaria de su familia. Su aventura en la cocina comenzó de niño, cuando corría entre las piernas de sus abuelos en el pequeño restaurante familiar que, desde 1946, en pleno centro de Roma, sirve a sus conciudadanos platos llenos de historia y cariño. Una empresa que ha evolucionado con el tiempo, pasando a manos de hijos y luego de nietos, manteniendo siempre la esencia de esa Roma auténtica e inolvidable.
Cuando decidió mudarse a España, inevitablemente llevó consigo los conocimientos de su familia. La idea de “Ahò” nació de la necesidad de transmitir a otros la misma pasión que animaba a su abuelo, ese profundo vínculo entre las tradiciones gastronómicas romanas y la innovación que exigía la era moderna.
El menú de “Ahò” es un encuentro entre el pasado y el futuro. Los platos son un homenaje a las recetas familiares, aquellas que el abuelo cocinaba con las manos manchadas de harina y un corazón lleno de amor. Pero, al mismo tiempo, el restaurante quiere ofrecer algo nuevo, una evolución del gusto que nunca olvida sus raíces, pero que se inclina hacia nuevas interpretaciones, con un toque contemporáneo, pero también reinterpretado.
