We have managed to source, at a good price, 3.5 kg of A5 grade sirloin WAGYU beef from Japan.
As you can see, this meat costs 200 euros a kilo to buy in bulk and that is exactly what we intend to sell it for to our customers, so that they may experience this exceptional meat product without forking out 150 euros just for a steak.
A 50 gram tapa of this A5 wagyu will cost 10 euros at La Gamba.
Wagyu A5 is the highest, most exclusive grade of Japanese beef, renowned worldwide for its buttery texture and intense "marbling" (intramuscular fat). The term signifies a combination of top-tier meat yield and supreme quality under strict Japanese standards.
A5 Wagyu—the highest grade of Japanese beef—is famed for its extreme, butter-like tenderness, which requires almost no effort to chew. It has a rich, velvety texture and a sweet, intensely savory (umami) flavor that gently melts on your palate, leaving a lingering, luxurious finish rather than a traditional "beefy" taste
Wagyu fat is distinctly different from the fat in conventional beef. It is surprisingly rich in monounsaturated fats (the "good fats" found in olive oil) and Omega-3s. While high in calories, its unique nutritional profile may actually help balance cholesterol levels when consumed in moderation.
THE MEAT HAS YET TO BE SLICED AND PORTIONED BY US SO IF YOU WOULD LIKE A PARTICULAR SIZED STEAK, JUST REQUEST AND WE CAN CUT IT FOR YOU. The price, cooked, in the restaurant will be 20 euros per 100 gram.
Because of how rich Wagyu is, steaks are normally cut smaller than traditional steaks.
Please note, wagyu is sliced and cooked thin, so we will not be offering a level of doneness on this product.
