Introducing The Spirits of Peru: Madre Tierra 🍸
Our new global bar menu launches tonight at COYA Marbella.
Rooted in Latin America’s vibrant spirit and COYA’s deep connection to Peru, Madre Tierra is the first chapter of a new annual bar series blending storytelling with contemporary mixology.
At its heart is Camila de Quilla, a modern explorer retracing her heritage across Peru’s defining geographies, transforming memory, heritage ingredients, texture, and aroma into cocktails that speak to the senses. Shaped by extensive research, journeys through Peru, and a deep exploration of local techniques, Madre Tierra is a poetic yet contemporary interpretation of place.
Her journey unfolds across three regions:
🌊La Costa - bright citrus notes, savoury depth, and the rhythm of Peru’s Pacific coastline
⛰️La Sierra - bold, spicy expressions shaped by altitude, warmth, and Andean spirit
🌿La Selva - lush, herbal, vibrant flavours inspired by the vitality of the Amazon
Madre Tierra is a journey through Peru, where each cocktail translates flavour, emotion, and a sense of place. The menu features 12 alcoholic cocktails, global signatures, Marbella exclusives, and four non-alcoholic creations.
