Ribeye vs Striploin?

At Siga La Vaca, our ribeye is Argentinian grain fed. Grain feeding gives the cut excellent marbling, those fine lines of fat that melt during grilling. That’s what makes ribeye softer, juicier, and richer in flavor.

Our grain fed striploin is still tender and juicy, but striploin is naturally leaner and firmer.

Some guests come in specifically for that full, buttery ribeye experience. Others prefer striploin for its cleaner, leaner texture. đŸ”„đŸ„©

Grain feeding creates more consistent marbling throughout the meat. That marbling melts during grilling, giving the ribeye a softer texture and a richer flavor over open fire. Grass fed beef has a firmer bite and a leaner profile. đŸ”„đŸ„©

đŸ”„ 1.Siga La Vaca has an huge open grill — meaning our guests can see, smell, and feel the fire in action as the meat is cooked. Cooking on the grill, the food is always more appealing to our senses. That is why everything is cooked over a fire here, it also generates passion and joy.

đŸ„© 2. Of course, you’ll find the classic steaks on the menu, but we also serve real traditional cuts, the kind you rarely see in Tallinn. We’re talking beef tongue (Lengua a la vinagreta de la nona), bone marrow, even beef brain. And every week, there’s a special “Kill of the Week”

🐄 3. “Siga La Vaca” in Spanish, it means “Follow the Cow.” But here in Estonia, “siga” actually means pig. So yeah
 there’s a fun little language twist hidden right in our name. It’s our small inside joke that somehow fits us perfectly. 😅

See restoran on paradiis lihaarmastajatele! Chef Simon alustas parrilla (suur lahtise tulega grill) chef’i ametiga juba Argentiinas, olles alles teismeline noormees. Ta sai praktika Argentiina parimate juures! Argentiinast viis tema kokandustee Boliiviasse, Peruusse, Brasiiliasse, Uruguaisse, Hispaaniasse, Venemaale ja meie rÔÔmuks lĂ”puks siia, Eestisse.
