Chapter II: The Potato

What is one of Head Chef Oliver Saaremäel’s favourite vegetables—and an ingredient in SOO’s eight-course tasting journey? The potato.

It may sound simple, but at SOO, it is transformed into something truly exceptional. Slowly baked for hours in a salt-dough crust, it develops a soft, silky texture and is paired with lamb’s tongue and smoked beurre blanc.

The result is deeply comforting yet refined—a true reflection of Estonian flavours.

Made even more special by being prepared in our outdoor kitchen, together with our guests. ✨

The Yellow House — once the manor’s servants’ quarters and later a home for the older children of Maidla Orphanage — is now home to Restaurant SOO.

🌿 Hidden in the wild beauty of Maidla Manor Park, it is a place filled with history, character, pure seasonal flavours and heartfelt hospitality.

Just a 45-minute drive from Tallinn, yet a world away from the everyday.

🌙 On an August evening, as dusk settles over the manor park of Maidla Nature Resort, we invite you to an unforgettable summer evening where music, gastronomy and nature become one.

Join us on 7 August for a unique collaboration between Mari Jürjens and Restaurant SOO.

Begin the evening with a curated five-course tasting journey by Chef Oliver Saaremäel, followed by an intimate candlelit concert by Mari Jürjens in the heart of our historic manor park.

✨ Only 35 seats are available for the full dining experience.

🎶 Concert tickets are also available for those wishing to enjoy the music and the magical atmosphere of Maidla.
