Batagor Ayam (Precooked)
a popular Indonesian street food variation of the classic Batagor. The name is an abbreviation of Bakso Tahu Goreng (Fried Tofu Meatballs), and the “Ayam” simply indicates that it is made with chicken instead of the traditional fish.

The Filling: A savory paste made from ground chicken, tapioca flour, garlic, and scallions. The tapioca gives it a distinct “chewy” or bouncy texture (kenyal) similar to a meatball.

The Crunch: This paste is stuffed into firm white tofu or wrapped in wonton skins (pangsit) and then deep-fried until the outside is golden and shattering-crisp.

The Sauce: It is almost always served with a thick, spicy, and slightly sweet peanut sauce.
