Three days to go 🇦🇷

Monday is May 25th, and if you grew up with locro on that date you already know the smell starts the night before.
The two non-negotiables are the ones you can't fake: maíz blanco (white corn) and ají molido (Argentine ground chili).

Locro is the dish that turns May 25th into a kitchen full of people. 🫶

If you've never had it, locro is Argentina's national stew. Slow-cooked white corn, pumpkin, beans and meats, finished with a deep red salsita of ground chili and paprika. Comfort food with a national holiday wrapped around it.

The classic version is cooked with bacon, chorizo, pork rinds, pork ribs and beef flank. But locro started as a humble Andean stew long before that, so it works beautifully meat-free too 🌱 Skip the meats, add mushrooms and extra pumpkin, and you have a vegetarian or vegan version that still feels like home.

Maybe you want to celebrate the 25th with friends. Maybe this recipe brought back a kitchen from far away. Maybe you've never tried it and now you're curious. Whatever brings you to the pot, there's a seat at the table. 🇦🇷
