Not all sake is made to be drunk cold.

Tamagawa Kimoto is brewed using the traditional kimoto method dating back more than 300 years. Unlike modern brewing methods, kimoto relies on natural microbes and a slow, hands-on process that requires both patience and skill, often resulting in a deeper, more layered flavour profile.

This sake is made from rice grown to support the local stork population near the brewery and has been matured for five years before release. Expect subtle woody notes, plenty of character, and a richness that never feels heavy.

Enjoy it with food, enjoy it on its own – and if you ask head brewer Philip Harper, enjoy it warm.
