Acht Gänge zwischen Erdigkeit, Säure, Wasser, Rauch und grüner Frische. Von Lachsforelle und Alpengarnele über Kartoffel aus dem Feuer, Reh-Coxinha und Black Angus bis zu Chicha Morada und Straßlacher Honig.

Eight courses moving between earthiness, acidity, water, smoke and green freshness. From trout and alpine prawn to potato from the fire, venison coxinha and Black Angus, followed by chicha morada and Straßlach honey.

Açaí begins not with the finished product, but with the process that comes before it.

During his journey for Season II, followed the transformation of the freshly harvested fruit: from removing the berries from their stems, to sorting and washing them, and finally extracting the pulp.

A precise process, deeply connected to its place of origin, revealing how profoundly a product is shaped by the way it is handled.

Açaí beginnt nicht mit dem fertigen Produkt, sondern mit dem Prozess davor.

Auf seiner Reise für Season II begleitete die Verarbeitung der frisch geernteten Früchte: vom Lösen der Beeren von den Rispen über das Sortieren und Waschen bis zur Gewinnung des Fruchtfleischs.

Ein präziser, unmittelbar mit dem Ort verbundener Prozess, der zeigt, wie sehr ein Produkt durch den Umgang mit ihm geprägt wird.
