Chakalaka 🇿🇦
Who is familiar with this South African veggie relish?
Growing up, I absolutely loved it! I think it's due to the curry flavour and the slight spice level, not to mention the versatility.
When moving to Germany and not being able to stock up on store-bought Chakalaka, I had to get my hands on a recipe so I can still enjoy this goodie. Check it out below if you're curious to try it yourself 🌶
It's a great addition at BBQ's (or as we call it, a braai), enjoy it with potatoes, on rice or for those lazy dinner nights, as a toping on toast.
INGREDIENTS:
1 large onion
1 green bell pepper
2 medium carrots, grated
2 large tomatoes
1 tin of baked beans
2 tablespoons of curry powder
3 tablespoons of sweet chilli sauce
1/2 teaspoon salt
1/2 teaspoon chilli flakes (optional)
1 tablespoon sunflower oil
METHOD:
Chop and fry the onion and green pepper in the oil over medium heat until the onion becomes slightly translucent.
Add curry powder and fry for another minute, then bring in the grated carrots and about 3 tablespoons of water to loosen everything up. Turn the heat down a notch or two and allow the carrots to steam for a few minutes.
Chop the tomatoes and add them to the pot, simmering gently.
Once the carrots and tomatoes are cooked, the baked beans, sweet chilli and salt can join the mixture.
When the mixture is warmed through it's ready to serve.

* optional extras: add a small tin of corn, a few chopped leaves of cabbage or even a few butternut pieces as added nutrition.
