CREATIVA’S RISOTTO BALLS | 𝗥𝗘𝗖𝗜𝗣𝗘 𝗥𝗘𝗩𝗘𝗔𝗟
with Yogurt Sauce & Sautéed Swiss Chard 🌱🔮

Here’s the full recipe so you can bring this little piece of Creativa magic into your own kitchen:
INGREDIENTS
Ingredients
For the risotto balls:
• 50 g rapeseed oil
• 100 g white onion, finely chopped
• 6 g salt
• 250 g risotto rice
• 250 ml water + 2 g vegetable broth + pepper
• 250 ml extra water
• 200 g soy milk
• 30 g nutritional yeast
• Polenta (for coating)
• Extra soy milk
• Oil for frying
Yogurt sauce:
• 200 ml soy yogurt
• 2 g salt
• 2 g garlic
• 10 ml olive oil
• 3–5 g ginger (optional)
Sautéed chard (optional):
• Swiss chard
• Rapeseed oil
• Salt

Risotto:
Sauté onion + salt in oil. Add rice and stir 3–5 min.
Add 250 ml water with broth + pepper. Let reduce.
Add another 250 ml water.
Mix soy milk + nutritional yeast and add when liquid is almost gone.
Cook until creamy. Cool completely.
Shape 35–50 g balls ->> dip in soy milk, coat with polenta, and fry until crispy.
Yogurt sauce:
Blend all ingredients (ginger optional). Set aside.
Chard (optional):
Sauté sliced chard 1–2 min with oil + salt.

Plating 🍽️ ✨
Spread a generous layer of yogurt sauce.
Add the sautéed chard in the center (if using).
Place the crispy risotto balls on top.
Finish with olive oil, a touch of soy sauce or chili oil, and chili flakes.
