A classic Sichuanese meal would be incomplete, and far less exciting, without various cold appetizers (Liang Cai) such as seasonal vegetables, pickles, and meat dressed in luscious red chili oil. Liang Fen, which translates to cold jelly noodles, is one of the locals' favorites. These noodles are made from the starch of various grains and pulses, such as yellow pea, mung bean, or corn. Cold small eats are also popular as standalone snacks, enjoyed on the street or on summer nights with friends over a drink.
