A classic Sichuanese meal would be incomplete, and far less exciting, without various cold appetizers (Liang Cai) such as seasonal vegetables, pickles, and meat dressed in luscious red chili oil. Liang Fen, which translates to cold jelly noodles, is one of the locals' favorites. These noodles are made from the starch of various grains and pulses, such as yellow pea, mung bean, or corn. Cold small eats are also popular as standalone snacks, enjoyed on the street or on summer nights with friends over a drink.

While Má Là is undoubtedly the most famous type of spiciness from this region, there's more than that: salted pickled chilis, or 剁椒 (duò jiāo) offers something bold and complex to savor. Pickled chilis, also used in Hunan cuisine, add another layer of umami and savory note to the sauce, making the dumplings refreshingly pungent and addictive.

Snacking is a different action in Sichuan. Not chips, not gummy bears, but real deal noodles (and other small eats we have!). Small-portioned sweet water noodles (甜水面) does not live up to the mild-sounding name, with the lip-smacking spiciness and al dente texture, it will become a filling meal before you even notice.

The air is hot and the street is bustling. On a typical Chengdu summer night, Siu Yeh (late-night meal, 宵夜) scene is thriving even after midnight. Street food is prepared and savored. Chinese noodles are not a monolith. At Cai Kitchen, we celebrate the vast and varied textures of noodles. These udon-like chunky noodles are nicknamed stick noodles (棍棍面), or known as sweet-water noodles. They are soft but also al dente, often so**ed in aromatic soy sauce and chili oil, every slurp is irresistible. Stay tuned for our new addition to the menu!

Inspired by soft pea soup and rice (豆汤饭), a lesser-known but ubiquitous street food in Chengdu, this new rice bowl features a rich miso-based chickpea ragu, black fungus and zucchini. Hearty without being heavy, it connotes the gentle side of Sichuan street food beyond the classic mala flavors.
