The wild oysters we sell are fished in the waddensea. They are fished by hand by and her husband Jan. The waddensea is a UNESCO reserve which gives a great meroir (terroir is for the earth what meroir is for the sea). Because of the enormous quantity of plancton the oysters have an astonishing quantity of meat. The flavour is silt with hints of cucumber and a slightly sweet saline finish.
