Chapter IV/VI

At nineteen, one of my favourite drinks was a cocktail made with mango and basil.

I loved that combination and somehow never forgot it.

Years later, when I created the Timeless Collection, I wanted to bring it back as an homage to that time in my life. The cocktail became a macaron, but the combination stayed.

I called it Legato, because that’s exactly what happens here: mango, basil and kaffir lime are connected into something new, something greater than each ingredient on its own.

Just like in music, where connecting the notes can create something completely different from playing them separately.

When was the last time you did something for the first time?

One time of mine was in Paris, when I was eleven years old.

That’s where I ate my very first macaron.
It was raspberry.

When I started working on the Timeless Collection, I knew I wanted to bring that memory back - but not by copying it.
Raspberry had to stay. Everything else reflects how I remember that first bite today.

Salted Sicilian pistachio adds another layer of depth and contrast, while tonka bean brings the elegance I probably wasn’t able to appreciate back then.

So in the end, it’s not the first macaron I ever ate - but my interpretation of the one that unknowingly started it all.

Chapter II/VI

When I was nine years old, I performed a three-movement violin concerto. Standing on stage, completely focused, trying to make it to the very last note without making a single mistake.

Years later, while making hazelnut praliné, I recognised that feeling again.

Once the sugar reaches the right temperature, there’s no pause button. You have to keep stirring, constantly paying attention. One small mistake, one second too long, and everything burns.

That’s why hazelnut praliné became the heart of Tenuto.

To amplify that feeling, I paired it with an espresso-infused ganache. Espresso adds another layer of excitement, almost like a racing heartbeat before walking onto the stage. Cardamom is simply my favourite twist on coffee—it makes the flavour unmistakably mine.

I deliberately chose milk chocolate instead of dark chocolate. Looking back at that performance, with all the pressure and responsibility it carried, I still wanted to remind myself of one simple fact:

I was only nine years old.

Looking back, I realised I wasn’t trying to recreate the concert, but to recreate what it felt like to live through it.
