Sharing for my own record (because we‘ve become so lazy updating the website)

This is a sort of Bolognese/Ragu inspired pasta sauce being worked on for our next catering evening. Not OG, definitely to our own likings.

Fry in a Pan:
- 2 Tbsp olive oil
- 200g onion, finely diced
- 15g garlic, finely diced
- 2 bay leaves
- 1 tsp fennel seeds
- 20g anchovies
- 250g minced beef
- 75g itialian fennel salami, finely diced
- some fresh black pepper
- 3 branches thyme
- 1 Tbsp dried oregano
- half a hand fresh parsley
- 15g tomato paste
- 50ml marsala
- 2 Tbsp balsamic vinegar
- 400ml beef stock
- 400ml tomato sauce
- 150ml milk

Just add all the ingredients in the pan one after the other and give them some time to develop flavour. Once you get to the liquids just let the sauce simmer down for an hour or two until a thick consistency is reached.
Serve the next day! Believe me it’s better!

We are using this Sunday to work on our Spätzle game!!! We‘re optimizing and standardizing the classic egg-based recipe as well as trying to find a vegan option. In the picture you can see what different amounts of tumeric would do. Turns out: 3 teaspoons are way too much and actually make the Spätzle go red 😅

Käsespätzle with fried onion, carrots and ham! This improvised version of the regional classic, which others would probably describe as Mac n Cheese, comes along with handmade Spätzle (a rough pasta made from flour, egg and water) improved in colour by adding a teaspoon of tumeric. All the rest is straight forward: Fry onion, carrots, garlic and ham, add some cream and milk, add some tasty cheeses and let them melt, season generously with salt, pepper and chives, add in the Spätzle and give it a mix, top everything with some more cheese and chives and let it all melt in the oven for a few minutes.

Chicken and Aloo Biryani - a classic Indian, Pakistani dish that combines tasty meats and vegtables with the must-have yellow sprinkled rice.

In this variation we used chicken and potato and seasoned with a very reduced chicken broth, ginger, garlic, green pepper, cardamom, cinamon, Maze, coriander, paprika, tumeric, kewra water and lime juice.
Placed in the oven, covered in Aluminium foil, the rice soaks up all the flavour and the meat becomes very tender.

Halloumi turkey Schnitzel with pasta in cashew rucola pesto

The halloumi is grated and mixed togehter with the bread crumps. I like to mix in some tumeric too so the Schnitzel gets a nice golden color.
For the pesto, I fried the cashews and garlic in olive oil first and then blended it togehter with the rucola. I did not use additional Parmesan here.

Pizza Pesto with … yup Pesto … pine nuts, parmesan and onions.
The pizza dough has been made 48 hours in advance and let sit at room temperature. Also, the dough already contained some pesto.
The result is a light (really not light at all) and very tasty baked good which is here being presented in Bambergs late friday afternoon sun, expressing the last days before we enter the fall and winter dish season.

Sunday Lunch is ready!!! - Very lean, slow cooked pork filet with oven roasted balsamic and smoked paprika brussel sprouts, broccoli and cheese spätzle. All topped with a dark beer and herb sauce.

Turkey ragu - Made from turkey, a lot of onion, tomato paste, tomato sauce, beef broth, white wine, milk and garlic. Seasoned with cumin seeds, smoked paprika, mayoran, Parsley, chili, soy sauce, salt and pepper.
Pan fried the onion and the turkey until very browned and then cooked it all on low simmer for four hours
