All These Doughnuts. One Topos Doughnut Line.

Topos a.s is delivering a large, fully automated yeast raised doughnut production line in Afyon city, Turkey, southeast of Istanbul, with a total capacity of 1,300 dozen per hour from mixing through finished product. The line is engineered in a 10-across configuration, maximizing throughput while maintaining product quality and process stability at industrial scale.
This turnkey system includes automated dough mixing, dough feeding, yeast raised sheeting with scrap dough return, scrap dough portioning int the mixer bowls, final proofing, frying and then cooling into down into packaging. The finishing of the doughnuts include glazing, half icing, sugar and sprinkle topping, injecting, and a final string icing decorator with fully programmable patterns. Injecting equipment is supplied by our Allied partner in Italy, with full integration engineered by Topos into the cooling and conveying system. All product conveyors and the double spiral cooler are being manufactured in stainless steel with Ashworth Bros. Inc. stainless steel rod belting.

The line is configured to produce Berliners, miniature Berliners (doughnut holes), full size ring doughnuts, and miniature ring doughnuts, and Topos doughnut lines are also engineered to support cake doughnuts and additional product formats, either at launch or through future line upgrades.

The yeast raised doughnut sheeting line is being supplied in partnership with AMF Bakery Systems Europe , AMF-Tromp. According to the customer, this will be the largest yeast raised doughnut line in the country and the first fully automated, industrial grade doughnut line of its kind, supporting the rollout of doughnuts into Burger King and the BK Café locations across Turkey.

A warm welcome to our Mongolian friends - International FAT Test Success

Topos is proud to welcome 10 representatives from Talkh Chikher Bakery, the largest bakery in Mongolia, for five focused days dedicated to baking innovation and equipment excellence.

The visit included Factory Acceptance Testing and hands on operator training on a custom engineered rye wheat bread production line designed for high capacity output with exceptional precision and consistency.

In partnership with Kontinua Lesaffre during a technological training session on bread sourdough production, the team successfully produced four varieties of rye wheat bread using sourdough levels of 10%, 15%, and 20%, along with the iconic Czech ŠUMAVA bread featuring 23% rye sourdough. The bread dough production line includes the following main components:

• Yeast solution maker
• Salt solution maker
• 1x mixing tank for sourdough ferment with a capacity of 1500 liters
• 4x tanks for fermenting and storing sourdough with a capacity of 2500 liters each
• Cooling and heating system for fermenting tanks
• Pumps and distribution system for sourdough transfer
• Dosing system for all ingredients including flour, water, oil, salt solution, yeast solution, and sourdough
• Automatic Dough Mixing Center T-240MC
• Dough handling system including conveyors for dough resting and line feeding
• Main control system

Návštěva přátel z Mongolska a úspěšné přejímací zkoušky nové linky TOPOS

TOPOS měl tu čest přivítat 10 zástupců největší pekárny v Mongolsku - společnosti Talkh Chikher, na pětidenním intenzivním školení a testování zaměřeném na výrobu žitno-pšeničného kvasového chleba.

Čas byl věnován přejímacím zkouškám a školení obsluhy nové linky TOPOS na výrobu žitno-pšeničného chleba a technologickému školení za podpory společnosti Kontinua Lesaffre, včetně výroby a senzorického hodnocení několika druhů chlebu.

Tým vyrobil čtyři druhy tradičního žitno-pšeničného chlebu s různým obsahem kvasu, včetně české klasiky chlebu ŠUMAVA s 23% žitného kvasu a vyšším podílem žitné mouky v těstě. Linka TOPOS na výrobu chlebového těsta zahrnuje tyto hlavní části:

• Výrobník roztoku droždí
• Výrobník roztoku soli
• 1x výrobník kvasu o objemu 1500 litrů
• 4x nádrž o objemu 2500 litrů pro zrání a skladování kvasu

Reliable machines start with accurate parts

At our production facility, each part is measured and verified against its technical drawing before moving forward. A handheld QR scanner is used to automatically upload the part number into the laser marking system. This removes the chance for manual errors and ensures each part is labeled correctly.

The laser marking code is taken from the final step of the manufacturing sheet that stays with the part through its entire production cycle. The Helios ERP system does not recognize the part as complete or ready for assembly until it has been laser marked.

Did you know that every part used in a Topos a.s. machine is laser engraved with its part number? This allows for easy identification and faster reordering in the future, improving serviceability and long-term equipment support.

Our process ensures every machine is built with precision, traceability, and the customer in mind.
