Chicken Kosha Recipe ❤️
**Ingredients:**
- 500g chicken (with bone)
- 2 large onions (finely sliced)
- 2 tomatoes (chopped)
- 2-3 green chilies (slit)
- 1 tablespoon ginger-garlic paste
- 1/2 cup yogurt
- 2-3 tablespoons mustard oil
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- 2-3 bay leaves
- 2-3 cardamom pods
- 2-3 cloves
- 1-inch cinnamon stick
- Salt to taste
- Fresh coriander leaves (chopped, for garnish)
**Instructions:**
1. **Marinate the Chicken:**
- In a bowl, mix the chicken pieces with yogurt, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Let it marinate for at least 1 hour.
2. **Cook the Chicken:**
- Heat mustard oil in a large pan or kadhai until it starts smoking. Reduce the heat and add bay leaves, cardamom pods, cloves, and cinnamon stick.
- Add the sliced onions and cook until they turn golden brown.
- Add ginger-garlic paste and green chilies, sauté for a few minutes until the raw smell disappears.
- Add the chopped tomatoes and cook until they turn mushy and oil starts to separate from the mixture.
- Add the marinated chicken pieces and cook on high heat for 5-7 minutes, stirring continuously.
- Reduce the heat, cover the pan, and let it cook for about 20-25 minutes, stirring occasionally.
- Once the chicken is cooked and the oil starts to separate, add garam masala powder and cook for another 5 minutes.
- Garnish with fresh coriander leaves.
# # # Laccha Paratha Recipe
**Ingredients:**
- 2 cups whole wheat flour
- 2 tablespoons ghee (clarified butter)
- 1 teaspoon salt
- Water (as needed for kneading)
- Ghee or oil (for cooking)
**Instructions:**
1. **Prepare the Dough:**
- In a large bowl, mix the whole wheat flour, salt, and 2 tablespoons of ghee.
- Gradually add water and knead the mixture into a soft, smooth dough. Cover it with a damp cloth and let it rest for 20-30 minutes.
2. **Make Laccha Paratha:**
- Divide the dough into equal-sized balls.
- Roll out each ball into a thin circle.
- Spread a thin layer of ghee on the rolled-out dough and sprinkle some dry flour over it.
- Pleat the rolled dough from one end to the other, making it look like a paper fan.
- Roll the pleated dough into a spiral and tuck the end underneath.
- Roll out the spiral into a flat disc again.
- Heat a tawa or flat skillet and cook the paratha on medium heat.
- Apply ghee or oil on both sides and cook until golden brown and crispy.
3. **Serve:**
- Serve hot Chicken Kosha with Laccha Paratha.
