Nothing goes to waste around here! Today I turned cooked jackfruit seeds into a creamy hummus with tahini, lemon, garlic, olive oil, and a little salt. Served with lightly fried brown rice spring rolls filled with cabbage, carrot, and red pepper.
Jackfruit seeds are often discarded, but they're actually packed with nutrients. They contain fiber, complex carbohydrates, antioxidants, and provide a surprising amount of plant protein. They also contain minerals like potassium and magnesium. A delicious and nourishing way to use the whole fruit while reducing food waste
