It's been a long day at work and soup is just what my exhausted brain is craving....
Seriously this is soup out of NOTHING, or whatever you have left in your kitchen....but it is so delicious you must make it...and it is full of flavour and delicious fats and protein!
1 onion, diced
5 cloves of garlic finely choped
1 carrot, diced
3-4 celery stalks, finely chopped
2 T olive oil
2 T sesame oil
1 lbs or more for more protein of ground turkey (you can use chicken or beef also, but as I said i had what I had)
1 can of coconut oil
4 Cups of chicken/veggie broth or 1T of vegetable broth powder with 4 cups of water
salt to taste
a handful of spinach, chopped (this is all i could pick out from a bag of spinach that was going bad, you can put more)
1-2T curry powder
juice of 1 lemon about 1 Tablespoon
1. in a frying pan place sesame oil and ground turkey, cook for about 10 minutes.
2. Into a pot, over medium heat add olive oil and allow to heat up, then add onions, celery, carrots, garlic and sautee for about 10 minutes
3. add curry powder and cook for another 4 minutes or so stirring occasionally
4. add broth, coconut milk and ground turkey with all the juices from the frying pan, cover and simmer for about 15 minutes
5. shut off the heat, add spinach, salt and stir and ENJOY!
