This is what our EL VERGEL profile looks like, before being selected and floated, to begin its fermentation process.☕🌱

It is very important to carry out this exhaustive process, since by depositing the cherries in water tanks, any defective grains can be discarded at sight.

How is it discarded? When a cherry floats to the top of the tank, it means that it has a low density or is an unhealthy cherry. After this process, the beans are ready for the fermentation process which ensures that we will only process quality beans.

Our JAVA EL EDEN🌱☕ From our El Vergel estate, is in the ripening process.

This exotic variety is characterized by a medium production yield, is grown at an altitude of 1,500 meters, and has a low acidity, with notes towards pineapple, a phosphoric acidity, a lingering body, with a refreshing aftertaste, and an unbelievable mix of tropical aromas.

This profile passes through an extended anaerobic fermentation, followed by a slow drying under the sun.

Factors that should be taken into account when drying a natural coffee under the sun☕🌱:

-Fermentation without control: when the coffee does not dry quickly enough after the fermentation, this can create some vinegar or over-fermented flavors as there are still active microorganisms in the process.
-Animal contamination: includes large wild animals that cause physical damage to the beans.
-Inadequate manual drying: occurs when coffee is not rotated correctly, which causes uneven exposure to temperature and airflow, resulting in rough drying within the same lot.

We all know that when coffee is handpicked it’s extremely important to pick only the ripe cherries. ✨🧑‍🌾

The ripe cherries are characterized by their red or yellow color and it’s the fully developed bean, which is found inside the coffee cherries that will give the coffee its best flavours.

It is important to note that just as coffee differs in aromas and flavors, it also differs in the color and size of its beans.

Before the coffee beans are picked from the tree, they go through a process of growth and development that is critical to their quality and flavor.

-Green coffee beans begin as small, unripe fruits on the coffee tree. Over time, these fruits grow and develop until they are mature and ready to be harvested. During this process, the coffee plant undergoes significant changes that affect the flavor and aroma of the final product. Factors such as altitude, climate, and soil conditions can all play a role in shaping the flavor of the coffee beans.

-Once the coffee cherries have reached peak maturity, they're carefully handpicked, and at this stage, the green coffee beans are still encased in a thin, protective layer called the parchment. It's not until later in the processing that the parchment is removed, revealing the raw, unroasted green coffee beans within.

It is not only for its huge coffee bean size, but also for its intense and complex aromas and moderate acidity with flavors that go from sweet notes of chocolate and butter to fruity nuances such as citrus, red fruits, and stone fruits.
Making it a great profile, with a lot of character and presence in our coffee compilation and in the selection of our clients.
