Il fut notre tout premier client, alors que l’équipement technologique était encore en phase d’ajustement, et avant même que le menu ne soit établi.

Le 25 novembre 2011, six mois avant l’ouverture d’Ultraviolet, M. Alain Ducasse franchissait nos portes. Sa visite était plus qu’un simple symbole : c’était une bénédiction. Sa reconnaissance et ses encouragements ont donné au chef Paul Pairet et à son équipe l’élan nécessaire pour poursuivre leurs rêves les plus fous.

En Mars 2025, la boucle est bouclée : le maestro est de retour à Shanghai, pour clore avec nous le dernier acte d’Ultraviolet.

Merci, Monsieur Ducasse, d’avoir écrit notre première page et fait honneur à la dernière. Vous faites à jamais partie de notre histoire.

He was our very first guest — when the technology was being tested, before the menu was set.

On November 25, 2011, six months before Ultraviolet’s opening, Mr. Alain Ducasse stepped through our doors. His visit was more than a gesture — it was a blessing. His recognition and encouragement gave Chef Paul Pairet and the team the boost to chase the wildest dreams.

Fast forward to March 2025 — the circle completes. The maestro returned to Shanghai, this time for Ultraviolet’s final act.

In our final month of service, we had the honor of hosting some of the culinary world’s brightest stars.
Legends, icons, friends — all gathered around our table. To say we were thrilled would be an understatement.

For 13 years, chefs and industry comrades from across the globe made the journey to experience Ultraviolet. And every time, it felt electric — that instant connection, fresh energy, and a shared passion for the language of food.

And what a grand finale it was — our last month, bursting with stars.
Thank you for traveling to Shanghai, for being with us, and for making this chapter one to remember (and one hell of a celebration).

ULTRAVIOLET’S FINAL ACT – The Dinner
“Ultraviolet by Paul Pairet is the first restaurant of its kind, attempting to unite food with multi-sensory technology to create a fully immersive dining experience.”

This experience has been created and directed by Paul Pairet, brought to life by the kitchen, and carried by the service.
Led by the Host, our service team glided in and out of the dining room, keeping the the rhythm, the flow, and the (occasionally unexpected) surprises right on course.

From the first Table Zero to the final Table 2,998, Ultraviolet has been immersive not only for the 29,990 guests who joined us, but also for the 30+ team members who made it possible.
Our guests — from near and far, whether strangers or friends — came together for one evening, co-creating a shared journey, a singular moment in time.

To everyone who ever sat at one of those 2,999 tables: thank you for being part of the story (and for trusting us for the wild ride).

From Paul Pairet’s first spark of an idea in 1996, through 3 failed attempts in Sydney, Miami and Paris, to finally finding a home in Shanghai in early 2010 and opening our doors in May 2012, Ultraviolet has defied time and space.
