Marinated for 6 hours in a mixture of beetroot, citrus and salt / sugar, giving it a perfect point of salting and nuances

When serving it, we temper it very well and add a touch of grill and direct charcoal on the meat, enhancing the barbecue flavor

To accompany it, we believe that the best way is with a creamy homemade tartar sauce, pickled onions, chicory and roe.

Plating one of the new dishes on the winter menu:
Flounder, basil mayo, fried capers, zuchinni & coconut-lime vinaigrette

Every day we receive about 12/14 pieces of this great fish where we subject it to a good bleeding and cutting.

With soft meat, gelatinous skin, this fish is perfect for low-calorie diets and easy to digest due to its low percentage of fat and high content of vitamin B3 and B6.

For this season we believe that it cannot have a better companion than the citrus and fresh nuances that accompany it
