🇮🇹 A milestone reached. A journey far from over.

After two intense years of dedication, stubborn passion, and endless pursuit of authenticity, I’m proud — and humbled — to share that Volti Italian Restaurant Bangkok has just been awarded the 3 Forks recognition by Gambero Rosso.

For those outside the Italian culinary world: this is one of Italy’s most prestigious honors. Much like Michelin stars, Tre Forchette (“3 Forks”) stands for excellence in food, service, wine, and overall dining experience.
In Thailand, only two restaurants received this award in 2025.
Among over 100 Shangri-La properties worldwide, and all the Italian restaurants within the group — Volti is the only one to achieve it.

This didn’t happen by chance.
Behind the scenes, it meant being relentless — pushing for the right ingredients, fighting for quality, and never compromising what Italian cuisine truly means.
It meant late nights, early prep, constant training, and respectfully insisting to leadership on what it takes to represent Italy with integrity on the plate.

A heartfelt thank you to Shangri-La Group and our Bangkok team for the support, and to all who share this mission of culinary excellence.

While I’m proud of this recognition, I see it as a starting point — a reminder of what’s possible when values meet vision.

A letter, a dream, and a memory that still inspires us today.
Back in 2006, Parco della Majella was just beginning — a small restaurant with big ambitions, rooted deeply in the soul of Abruzzo.
No Instagram. No easy outreach. Just passion… and letters.

Our founder, Chef Bruno Ferrari, used to write to the greatest chefs in the world, sharing our humble à la carte menu and photos of his creations — asking only one thing:
“How can we do better?”

Among those letters was one sent to the legendary Paul Bocuse.

Weeks later, a reply arrived. Hand-signed. Personal. Encouraging.
A moment that still lives in our kitchen, in our philosophy, and in every dish we serve.

Because great cooking begins with humility, and grows with the courage to ask.
