❤️Haitian Patties (known as “Pate Ayisyen ”), a popular, flaky pastry filled with savory meat like beef, chicken, or salted cod (morue). They’re delicious and perfect for parties, snacks, or breakfast.
❤️ HAITIAN PATTY (PÂTÉ HAÏTIEN) RECIPE
✨ INGREDIENTS:
For the Dough (Puff Pastry Style):
• 4 cups all-purpose flour
• 1 tsp salt
• 1 cup cold water
• 1 tsp white vinegar or lemon juice
• 1 ½ cups cold butter (cut into small cubes)
• Extra flour for dusting
For the Filling (choose one):
Ground Beef Filling:
• 1 lb ground beef
• 1 small onion (finely chopped)
• 1 bell pepper (chopped)
• 2 garlic cloves (minced)
• 2 sprigs thyme or 1 tsp dried thyme
• 1 tsp epis (Haitian seasoning)
• 1 tbsp tomato paste
• Salt & pepper to taste
• Optional: Scotch bonnet for heat
Other options: Shredded chicken, salted codfish (rinsed/boiled/desalted), or turkey

🔥 DIRECTIONS:
▫️▪️▫️1. Make the Dough:
• In a large bowl, mix flour and salt.
• Slowly add water and vinegar to form a dough. Knead until smooth.
• Wrap in plastic and let it rest in the fridge for 30 minutes.
• Roll the dough into a rectangle. Dot the surface with pieces of cold butter.
• Fold the dough like a letter (3 layers), rotate, and repeat. Do this 4–5 times, chilling in between. This creates the flaky layers.
Alternatively, you can use store-bought puff pastry to save time.
▫️▪️▫️2. Prepare the Filling:
• In a skillet, sauté onion, garlic, and bell pepper in a bit of oil.
• Add ground meat and cook until browned.
• Mix in thyme, epis, tomato paste, salt, and pepper. Cook until fully done and not watery.
• Let the filling cool.
▫️▪️▫️3. Assemble the Patties:
• Roll out your dough to about ⅛ inch thick.
• Cut into rectangles or squares (approx. 4x4 inches).
• Spoon some filling into the center, then fold over and seal the edges with a fork.
• Place on a baking sheet. Brush the tops with egg wash (1 egg + 1 tbsp water) for golden color.

• Preheat oven to 375°F (190°C).
• Bake for 25–30 minutes, or until puffed and golden.
