Not every steak has to come from beef.

This is our Pata Negra Bellota Neck, from Iberian pigs raised by Carlos Gonzales in Salamanca.

Each animal has around 1 hectare of land to roam freely through the oak forests, roughly the size of 100 Swiss four-room apartments.

In autumn, when the acorns fall, the pigs can eat up to 8 to 10 kilos of them per day. Together with wild herbs and natural movement, this gives the meat its rich marbling, delicate texture, and slightly nutty flavour.

The neck is one of the most flavourful cuts, juicy, intense, and beautifully tender when grilled.

Breed: Iberian Pigs Bellota
Feeding: acorns and herbs
Aged: 2 weeks wet aged
