Dosa Live - Farm to Fork Journey #4

Did you know that the 4 letter word Dosa is made up of just 4 ingredients?
1. Vigna Mungo (Urad dal) - It's a bean grown in South Asia and it has been in cultivation from ancient times and is one of the most highly prized pulses of India. It is very widely used in Indian cuisine for making a variety of dishes.
2. Flattened rice - type of rice dish made from raw, toasted, or parboiled rice grains pounded into flat flakes.
3. Fenugreek Seeds - The seeds are commonly used in ingredients in the Indian Subcontinent. This helps the dosa give a crispy texture.
4. Short Grain rice - The short grain rice is commonly found in the south India which is specifically used for making the dosa batter. When soaked and grinded, the rice becomes soft and stickier which helps in the fermentation of the batter.

These 4 ingredients are soaked for many hours and grinded with the help of a stone grinder. The batter is then allowed to ferment for a day, and then ready to use. The complete process takes upto 35 hours or more depending the amount of dosa batter you want. For our latest event, we brought in 20 litres of batter and made around 150 dosas for our clients.

Do you know what gives the crispy dosa a better flavour?

At Dosa Live we use cold pressed sesame oil from India to cook our Dosas.

Cold-pressing is the traditional method of extracting oil from seeds/fruits. The sesame seeds are typically ground into a paste, and this is pressed with a heavy stone mill, turned by bullocks, until it expels the oil. This first-pressed oil, is sold unrefined, and without any additives.

Dosa Live - Farm to Fork Journey #2

At Dosa Live we serve home made food with magic spices in our Sambar and chutneys.

Sambar is a lentil-based stew, cooked with pigeon pea and tamarind broth.

Sambar often contains sambar powder, a coarse spice mix made of roasted lentils, roasted whole red chilies, fenugreek seeds, coriander seeds, asafoetida and curry leaves. The spice comes all the way from Chennai, India from the mother’s kitchen.

Dosa Live - Farm to Fork Journey

At Dosa Live we use indigenous raw material sourced from our family farm in the Western Ghats region in India. All crops are organically grown in the most natural setting.

The paddy sowing season is upon us at Seema Tai's Farm. This is a local variety of rice called 'Indrayani' known for its flavour and fragrance which enhances the quality of our dosa batter.

In the season of summer 2022 we are getting ready to offer rice, millets and turmeric to our Dosa Live in Switzerland.
