One of my favourite vegan bowl of noodles ! “Suan La Fen” from Chongqing. Its is possible to have good food without meat.

Chewy sweet potato noodles soaked in an umami loaded broth. It’s not just hot and sour, there are many more flavours to it. The umami tartness from pickle vegetables and crispy crunch from the fried beans and peanuts . The aromatic coriander and spring onions and the freshness of the pack Choi. So many layers of flavours and textures and the cherry on the top is my homemade chilli oil which doesn’t burn your mouth but has a good heat and smokiness.
