Origin: from the back piece of beef (roast beef + fillet), with bone
Appearance: typical T-shaped bone that separates roast beef and fillet from each other, fillet content is smaller than the Porterhouse steak, fine marbling, with fat edge on the roast beef portion
Meat structure: tender, fine-fibrous muscle meat with moderate fatty tissue, the roast beef portion is slightly firmer in the bite than the fillet piece
Taste: Meat of roast beef and fillet has a mild taste of its own, bone and fat rim give additional aroma
