Dear friends 🥰

we are truly happy to share emotions and photos from Vyshyvanka Day, which took place on Saturday, May 30 🌞💛💙

A huge thank you to the organizers , guests, and everyone who cares about, values, and supports Ukrainian culture.

At Kozak Buvette we were happy to take part with our dishes — we prepared cabbage rolls, syrnyky, and crepes with mushrooms and cheese, as well as our bestseller — cold berry kompot, which was especially refreshing on such a warm day.

It was a joy to see our regular guests, meet new people, and spend this day together with our colleagues: Ukr Lawka , Restaurant Oleksandr, Smakolyky, and Switli .basel and many others, who also served delicious food and celebrated Ukrainian culture at the festival.

Thank you for the music, exhibitions, books, art, workshops for adults and children, and Ukrainian dances.

We are always happy to welcome you at Kozak Buvette in Markthalle , and to provide catering for your events to share Ukrainian home cuisine and culture.

From June 10 to June 28, 2026, Quartierzentrum Union in Basel will host the Ukrainian photo exhibition “The Clock of War”, based on the Ukrainian Photo Diary project.

The exhibition presents photographic works documenting the impact of the Russian war against Ukraine on civilian life and the transformation of everyday reality during the war.

We’re happy to join this year’s Vyshyvanka Day celebration on 30 May at Theodorskirchplatz, Basel 🇺🇦

Together with other Ukrainian restaurants, artists and activists, we’ll be part of a big open-air celebration of Ukrainian culture — food, music, art, and traditions coming together in one place 💙💛

Expect a full day of atmosphere:
✨ live music and performances
✨ Ukrainian artists and makers
✨ workshops and activities for kids and adults
✨ a vibrant Ukrainian food court

Of course, we’ll be there with our food alongside Oleksandr, Switli .basel , Smakolyky and UkrLavka — serving beloved Ukrainian dishes like borscht, varenyky, potato pancakes, grilled meat, pickles and more 🤤

At 12:00, 200 free portions of borscht will be served by Ukrainian Radio “Borshch FM”
and Restaurant Oleksandr 🍽

The event is supported by the Embassy of Ukraine in Switzerland 💙💛🇨🇭

Svitlana, Tetiana, and Larysa — the women behind the kitchen, each with a unique story and a shared passion for Ukrainian food.

👩‍🍳 Tetiana worked in banking and marketing, life led her into the Kozak kitchen.

💬 “I started by learning recipes — now I’m a full-time chef. It’s a small business, we all do everything.”
💬 “Kozak Buvette is like a small island of Ukrainian culture in Basel. People pass by, try the food, and say: ‘It tastes like my grandma’s.’”
💬 Her favorite dish? “Cabbage rolls — small, handmade, like Arabic mansaf. I didn’t like them as a child, but now they’re my favorite. It’s a dish we make for special occasions on request”

👩‍🍳 Svitlana remembers the early days, when Ukrainian cuisine was still new to many in Switzerland:

💬When we started, Ukrainian food was not well known. We had to explain our dishes and introduce people to our traditions. But now, people come from all over—Bern, Poland, Slovakia, Canada—because they want to try Ukrainian food.
💬 For Svitlana, food means family. “It’s about gatherings, big holiday tables with 15–20 dishes. Cooking is how we show love — it’s about sharing, about welcoming.”
💬 Her favorites? Borscht, dumplings, pancakes with jam — “because I have a sweet tooth!”

Larysa is the quiet force behind every single handmade dumpling — varenyky, pelmeni, pierogi. Each one folded by hand, filled with care and tradition 🥟

🎤 We asked our chef Tetiana .1980.tkachenko why she loves cholodnyk — and her answer says it all:

“I love cholodnyk because, first of all, it just looks beautiful — visually, it’s stunning! It’s cold, kind of like a healthy ice cream, and perfect for warm weather. 😋

The taste is sharp — somewhere between sweet and sour. It’s super healthy: made with natural yogurt, sour cream, cucumber, loads and loads of fresh herbs, and beetroot.

The beetroot adds a gentle sweetness, and we balance it out with lemon, a bit of pepper, and absolutely no sugar!”

This Ukrainian cold beetroot soup is refreshing, vibrant, and full of flavor. Come try a bowl of sunshine — the kind that chills you down ✨
