Aloo Paratha is a golden, flaky whole-wheat flatbread stuffed with a flavorful spiced potato filling. The potatoes are seasoned with aromatic Indian spices, fresh herbs, ginger, chilies, and coriander, then stuffed inside the dough and cooked on a hot griddle until crisp and golden.
Parathas themselves have a long history in South Asian cuisine, while the potato-filled version became popular after potatoes were introduced to India during the 18th century.
Traditional Preparation:
Whole-wheat flour was kneaded with water and a little salt to make a soft dough.
Potatoes were boiled, peeled, and mashed.
The potatoes were mixed with spices such as cumin, coriander, chili, ginger, and salt.
A portion of dough was rolled out and filled with the spiced potato mixture.
The dough was sealed around the filling and gently rolled into a round flatbread.
It was cooked on a hot tawa (griddle) with ghee or oil until golden brown and lightly crisp.
Traditionally, it was served hot with yogurt, pickle, butter, or chutney.
