We’ve been at this for a long time and still can’t cumbia, but the roasting’s coming along.

Craft is a generous word for weighing things carefully. But that’s mostly what it is.

Four methods, four sets of numbers. 1:16 for drip and pour-over. 1:15 for french press and AeroPress, because immersion brewing needs the extra help. Coarse grind for the press, fine for the AeroPress, medium in between. Cooler water for the AeroPress — a fine grind at full heat turns bitter fast.

Start with the ratio, adjust to taste.
