Well… that didn’t take long. 😂

Yesterday I found out Biscoff was vegan, and someone immediately commented that we needed to make Pumpkin Biscoff.

Naturally, it was the first one we made. 🎃🍪🍦

Vegan pumpkin ice cream layered with Biscoff spread and loads of crushed Biscoff cookies.

Keep the ideas coming… apparently I’m easily influenced. 😂

Summer got busy, so I chopped up a stash of Mint Girl Guide Cookies and tucked them away for a day when I had time to play. Apparently today was the day. 😂💚

Mint Girl Guide Cookies & Cream 🍪🍦

Half vanilla cookies & cream. Half mint cookies & cream. Layered together with chopped Mint Girl Guide Cookies and just a little drizzle of chocolate fudge hiding between the layers.

I wanted the mint without going ALL IN on the mint, and the vanilla does exactly that. Plus… those layers. 👀

Cool, creamy, crunchy, chocolatey and just minty enough.

This one turned out pretty damn good. 😏
