Marinated oyster mushrooms in a roasted mushroom juice with thyme and garlic that we reduced and concentrated, then grilled over charcoal. End result taste like char-broiled pork. Absolutely amazing, the whole kitchen team couldn’t stop eating them:)

To be served in a glazy sauce with mushroom stuffed ravioli 🤤🤤🤤

This will be a main course offering for the next couple weeks.
