A tv show that hits close to home for me, so naturally had to hit at least a few spots that Marcus visited during his stage in our limited time here.
"The Bear", especially Season 1 and 2, an accurate depiction of resto life imho. A beautiful show that brought so so many feels.
At one point in my 30+ years of cooking I've been every character in this show, from being an as***le of a chef, to the dishwasher to the ethic line cook. (Especially Cuzzin, you need some s**t and ill find it.)
The anxiety of the kitchen to the chaos, errrthang.

#1 Poulette
They serve only two items: a chicken sandwich and a mapo tofu sandwich. Founded in 2020 by chefs Martin Ho and Jesper Norrie, Poulette has become a Copenhagen hotspot, drawing hundreds of visitors daily

- spicy chicken sandwich - self explanatory and one of the best thing on our trip. 10/10. Love that they make 2 things only, this is the way.

#2 Polser Danish hot dog near Nyhavn.

Pølser consist of traditional Danish sausages served inside a bun and are considered a sort of gourmet hot dog. Rød pølse is a pork sausage with an unusual colour that became popular in the 1920s.

Stop #1 Juno the Bakery
Born in 2017 in the neighbourhood of Østerbro, JUNO the bakery has remained faithful to its artisanal model.
- cinnamon buns - one of theit classica and the best cinnamon bun, one if not the best I've ever had.
- custard bun - yeasted dough layered with aromatic vanilla butter with polynesian vanilla custard finished with vanilla syrup

Market Square
- Muikku (fried vedance), my favorite thing on the trip so far.
This small freshwater fish is abundant in Finland. One of the favorite cooking methods is breading the fish and frying it in butter.
- Reindeer hotdog dog (my first time trying reindeer)
- Karjalanpiirakka (rice pies), a very popular pastry in Finland originally from the region of Karelia. The rye crust is traditionally filled with rice porridge and topped with egg butter.

Old Market Hall
- Caviar Tasting. (Beluga, Siberian, Oscietra, Sevruga Sturgeons). The most expensive thing per size weight I've ever eaten. These 4 small spoons worth cost $80 cdn. Not gonna lie, when I was younger I told myself that one day I'd eat caviar like some rich dude lol, bucket list ✔️
- Lohikeitto (salmon soup)
- Graavilohi (cured salmon), a Nordic dish made from raw salmon which has been cured in salt, sugar and dill.
- ruisleipä (rye bread), Finland's version is genuine 100% rye bread made from unique Finnish yeasts to give it a dark, dense character. This bread is one of Finland's staple foods and a part of Finns' cultural identity for thousands of years.

Last Pic. I just took one small bite of the salmon bread and this fu***ng guy (a huge ass herring gull almost 2 feet long) dive bombed in and SWIPED THE ENTIRE thing from my hand. Lol.

Old town Tallinn, Estonia. A unesco site. Incredible look into the past.

First bite was in

"Taiga style" - bear meat dumplings, in a gummy broth with carrots and onion. (First time eating bear,believe it or not)..

Shhi (sauerkraut soup) a'la Peter under pastry crust in a clay pot + nastoika (infusion)

Delicious apple tea (not pictured)

Small snack of sweetness, street peanuts.

Last Pic. Just a wild boar and a wolf carrying a cart of beer. No big deal.

Well, to date the BEST pierogi/ perogy we have ever tried anywhere in the world.
Why?
was recommended by our tour guide as the best pierogi in Gdansk a beautiful city.
These take 25-35 min to make, the wait list is can be up to 45 min.
The staff make the pierogi TO ORDER.
Thats why they were the best, most of the time you get them premade or frozen, not here.
We got 3 types, boiled traditional, baked minced beef and chocolate, white chocolate and mascarapone and raspberry. 10/10.

We also got to try Zurek, (without bread bowl)a traditional Polish sour rye soup made with a fermented rye flour starter, which gives it a distinctive tangy flavor. It's a hearty dish typically containing white sausage, bacon, potatoes, and mushrooms.

2nd stop was .piekarnie
The best bakery in Gdansk, and they didnt disappoint.

Chef Allan was one of the first cannabis chefs in Canada to work with cannabis and food on a large scale in the open?
Progressively back when you had to work underground with your craft.

From facilitating in the creation of arguably the first Cannabis 101 course with Red River College, to teaching people how to make the first "Infused Tocilog" on CTV. Chef Allan with is the longest running cannabis pop up dinner series in Canada since 2014. From teaching workshops and at tradeshows to cannabis cooking classes. Chef Allan has been involved in the cannabis industry and a cannabis advocate since 1999.

Some of the best chocolate in Bruges. Belgian chocolate, arguably some of the best chocolate in the world.

By far the best how chocolate we've ever had. You pick your chocolate, weigh it and add hot milk and stir.

Zeebruge/Bruges Belgium

The famous Belgium waffles, dating back to the middle ages. Of course we had to have some.

Chez Albert is known for serving Liège waffles.

The Liège waffle is a culinary specialty from the Wallonia region of Belgium, named for the city of Liège.

Its history dates back to the 18th century, with its popularity increasing in the 19th century. 


The House of Waffles in Bruges was named "Waefelghem" (which means "House of Waffles" in old Dutch) in tribute to Monique Van Waefelghem, a Bruges native born in 1929, who passed away in 2015. The establishment honors her memory, her warm personality, and her family's tradition of gathering to bake waffles.
