A New Chapter for Bistro Dansk
A Final Message from Paul, Pam, and the Bistro Dansk Family

To our beloved customers, friends, and extended family,

It’s hard to believe we’re writing these words - the kind that close the final chapter of a book we never quite imagined ending.

Over the past few months, since the Winnipeg Free Press shared our story, we have been blessed with an outpouring of love that left us completely humbled. So many of you reached out - with memories, laughter, tears, and above all, gratitude. And now, it is our turn to say thank you - and to share some beautiful news.

After more than 36 years of ownership, and over 40 years of Bistro Dansk living within our family, we are proud to share that the time has come for us to step back and pass the torch. While this decision has been one of the hardest of our lives, it has also become one of the most hopeful - because we’ve found someone to carry on what we’ve built.

We are overjoyed to introduce Chef Grant, the new owner of Bistro Dansk.

From the moment we met him, we knew he shared the same passion and respect for this little restaurant that has meant everything to us. Chef Grant understands that Bistro Dansk is more than a menu - it’s a memory. A place where generations have gathered to celebrate life’s highs, find comfort during its lows, and share everyday meals filled with warmth, laughter, and connection.

While this moment is bittersweet, we feel an incredible sense of peace knowing that the Bistro is in caring and capable hands - someone who will honour its legacy while bringing his own energy and vision to the table. Just as we once took the reins and built upon a dream, now it’s his turn - and we know he will continue to serve you, the Winnipeg community, with pride and love.

This transition isn’t just about retirement - it’s about making space for moments we’ve missed. It’s time for us to be parents first, and now grandparents most of all. We look forward to bedtime stories, holidays unhurried, and simply being present - something this beautiful, demanding journey rarely allowed us to do.

We want to thank each of you - for your trust, for your loyalty, and for letting us be part of your lives. Over the decades, we’ve celebrated birthdays, anniversaries, retirements, proposals, baby showers, first dates, and final goodbyes with you. You’ve brought your families to our tables, and in turn, became family to us. What a gift it has been.

We also want to recognize and thank our children - who were raised in this restaurant, who worked by our side, and who made this truly a family business in every sense of the word. And to our daughter, Carley, who helped manage and grow Bistro Dansk for the past 17 years - your strength, dedication, and heart are woven into every corner of this place.

To those who may be wondering - this is not a farewell to Bistro Dansk, just a farewell from us.

We will remain in the background for a little while, helping with the transition and ensuring everything flows smoothly - but you’ll soon see new faces, familiar flavours, and perhaps a few fresh touches, as Chef Grant begins his chapter. Without your unwavering support, Bistro Dansk would not have become what it has, and it is our parting wish, that in true Winnipeg fashion, you all will continue to support the Bistro Dansk legacy and in turn Chef Grant and his team in the weeks, months and years ahead!

What will never change is the heart behind it all: a place that feels like home.

From the bottom of our hearts…
Thank you.

Thank you for walking through our doors.
Thank you for every shared laugh and quiet conversation.
Thank you for allowing us to live out our dream, one plate at a time.

We will carry these memories with us always.

With endless gratitude and love,
Paul & Pam Vocadlo
And the entire Bistro Dansk Family

A Heartfelt Message from Paul, Pam, and the Bistro Dansk Family

To our cherished customers, friends, and extended family:

In the days since the Winnipeg Free Press article was published, we’ve been moved beyond words. The outpouring of love, the phone calls, the memories you’ve shared, it’s been overwhelming in the most beautiful way. But along with that has come some confusion and concern, so we wanted to take a moment to speak from the heart and bring some clarity to this recent news.

After more than 36 unforgettable years of ownership, and over 40 years of Bistro Dansk being in our family, we’ve made the incredibly difficult but meaningful decision to begin the next chapter of our lives - retirement.

For decades, we’ve poured every ounce of ourselves into this little restaurant. Fifteen-hour days, five or more days a week, and we wouldn’t change a thing. Bistro Dansk has been our second home, and you have been our second family.

If we could do it forever, we would. But we’ve come to understand something that’s taken years to fully accept: there comes a time when you need to pause, breathe, and embrace life’s precious moments. It’s time for us to enjoy what we’ve missed - to truly be mom and dad to our children, and grandma and grandpa to our three beautiful grandchildren. We want to laugh with them at the dinner table, cheer them on at school concerts and sporting events, and simply be present.

We can’t even begin to describe what it’s meant to cook for you over the years. To host your birthdays, anniversaries, first dates, family reunions, retirements, and even moments of grief, it’s been the honour of our lifetime. You have trusted us with your most important memories, and we’ve carried that trust with immense pride and gratitude.

Through the years, many of you became more than regulars. You became dear friends. You checked in on us through hard times, you brought joy through the doors, and you made this restaurant feel like home. The connections we’ve built with you are the heartbeat of Bistro Dansk, and those friendships will last long after our final meal is served.

We know this news brings mixed emotions. It does for us, too. This restaurant is our life’s work. We built it as husband and wife, raised three children in the midst of it, and watched our daughter proudly carry on the legacy alongside us for the past 15 years - many of you have shared stories, laughs, and quiet moments with her too. When the day comes to pass it on, it will feel like leaving behind a piece of our hearts.

But please know: this is not goodbye.

Yes, Bistro Dansk is officially for sale.
No, we don’t have a buyer yet, and there isn’t and won’t be a closing date.
We are still open, and we’re still here doing what we love, which is serving our community with care.

We understand the uncertainty, and we’ve received so many calls and messages asking, “Is this it?” Let us assure you: this is only the beginning of a transition, and it’s one we plan to do thoughtfully, carefully, and with you in mind.

Our greatest hope is to find someone who sees what this place means - not just as a business, but as a gathering place full of love, warmth, and tradition. Once we do, we’ll be here to help guide them, support the handover, and ensure the spirit of Bistro Dansk continues on.

Until then, we remain as always: grateful beyond measure for each and every one of you.

From the bottom of our hearts, thank you.

Thank you for walking through our doors.
Thank you for celebrating life’s biggest and smallest moments with us.
Thank you for believing in our food, our family, and our dream.

This journey has been more than we ever imagined, and it’s all because of you.

With love, gratitude, and so many memories,
Paul & Pam Vocadlo and Family
