The Red Ember The Red Ember is a wood-fired pizza truck in Winnipeg featuring locally sourced and organic ingredients. We feature locally-grown food cooked to perfection.

The Red Ember is a wood-fired pizza truck out and about Winnipeg during the summer months. We've got over 1000 lbs of Manitoba tomatoes preserved from last fall for our pizza sauce this summer. Our crust uses Manitoba-grown organic flour milled in Elie. Our meats are locally raised and from free-range animals. Genuine, stretched mozzarella, made in Winnipeg with Manitoba milk, and herbs and vegeta

bles grown in our own garden will all be featured on our menu. Weekly specials will showcase what's fresh and in season.

Manitoba tomato sauce, Memphis BBQ sauce, pulled pork, mozzarella, red onions, roast corn from Frank Funk here at the market, and finished with dill pickles made from cucumber from Reimer Gardens. The beets have arrived! We are kicking off the Beet season with today’s special You Can’t Beet The Cheese. Olive oil, Pecorino, Parmesan, mozzarella, smoked Mb chicken, red onion, ricotta, garlic-lemon butter braised beet greens, and finished with a Feta-horseradish crema. My brother Andreas from is sacrificing his retinas posing with today’s special The B.L.T. Slow roasted pork belly that he raised, Red Sun Farms tomatoes, Reimer Gardens green cabbage and finished with a roast garlic aioli. It’s a once around special with all the main ingredients coming from where we sell. Add that to our naturally leavened dough made with Prarie Flour Mills organic MB flour and tomato sauce made from St.Norbert Market sourced tomatoes it’s all from close to home. Never mind; buy Canadian, buy Manitoban!

What a beautiful day for outside work. Today is a day of reliving childhood memories of gathering wood in the forest. Back then was to heat the family home, today is to heat The Red Ember’s oven. I only take oaks that have lived their lives already- never live ones. For some reason I can’t bring myself to cut something down that is still living for hundreds of years already….

Well, this is the end for the big red truck- for the 2024 season! We joined the sponsor family of .racing this year and it has been a wonderful adventure! A longtime sponsor of the team of the 4 sisters motocross team is and they are providing the finishing touch on today’s special The Four Horsewomen. Tomato sauce starts the party in our naturally leavened organic Manitoba flour dough, then comes roasted garlic, roasted Poblano and banana peppers from Reimer Garden, heritage pork made the carnitas, roast corn from Reimer Farms, mozza, queso fresco, and then finished with Salsa Verde from Heartbeat Hot Sauce Co, cilantro and a lime wedge. Here till 2pm and back in May 2025. Have a great winter!

It’s leek time! So that means it’s time for our ode to Alsace with our seasonal favorite-The Flammkuchen. We start with a base of crème Fraiche, the. A layer of pancetta and then topped with a beautiful layer of leeks and finished with black pepper. This is our second last market of the year - here till 2pm!
