At MAiiZ, nixtamalized corn serves as the thread connecting a broader exploration of Mexican cuisine one that reaches beyond familiar expectations and into the depth, diversity, and regional richness of a culinary tradition thousands of years in the making.
Each day begins with certified organic BC corn, transformed through the ancient process of nixtamalization and stone-ground into masa. From there, the story unfolds through mole simmered over days rather than hours, seafood shaped by the Pacific Ocean, heritage ingredients carried across generations, agave spirits, slow braises, wild flavours, and seasonal inspiration drawn from the landscape surrounding us.
Rooted in Mexican tradition yet deeply connected to Canada’s West Coast, MAiiZ exists in the space between preservation and evolution. Not as a reinterpretation of Mexico, but as a continuation of its living culinary narrative one shaped by place, migration, craftsmanship, and curiosity.
As a boutique gastroteca, MAiiZ invites guests to discover a Mexico that is both familiar and unexpected. A place where tortillas, tamales, mole, seafood, vegetables, mezcal, and hospitality share the same table. Where every ingredient has a purpose, every technique has a history, and every dish contributes to a larger conversation about culture, identity, and flavour.
