THE MONTREAL HOAGIE. SEPT 2026. SOTM.

Tragedy brought me back to Philly last month and we wanted to put out something that my cousin would have loved. Something that pays homage to the city he loved so dearly, but mixing in some MTL love. So here it is.

The Montreal Hoagie.
Salami, capicollo, mortadella, prosciutto cotto, fresh mozzarella, roasted red peppers, pepperoncini, shredded lettuce, sliced onions & red wine vinaigrette.

Starting on Sunday, it will be served on a sesame & poppy seed hoagie roll. We needed a little extra time to test out a banging recipe for this one, so sorry for the delay.

Simple, stacked & delicious.

LE MONTREAL HOAGIE

Une tragédie m’a ramené à Philly le mois dernier. On voulait créer quelque chose que mon cousin T aurait adoré, tout en rendant hommage à la ville qu’il aimait tant. Alors le voici — le Montreal Hoagie.

Salami, capicollo, mortadelle, prosciutto cotto, mozzarella fraîche, poivrons rouges rôtis, pepperoncini, laitue émincée, oignons tranchés et vinaigrette au vin rouge.

Servi sur notre pain hoagie aux graines de sésame et de pavot. On a pris un peu plus de temps pour perfectionner une recette vraiment solide pour ce pain, alors désolés pour le délai.

Simple, généreux et délicieux.

Today is Ian’s last day as Chef of our Verdun location.

Ian has only been with us for a year, but his impact on this team goes far beyond that.

He took on the challenge of leading the Verdun kitchen at a time when the team was scattered, wild, disorganized and lacking structure. Not an easy job… and definitely one that takes a fighter.

Since stepping into the role, prep got tighter, orders got dialled in, and most importantly, the team came back together. He’s leaving on a high note, with the Verdun crew closer and stronger than they’ve been in years.

Ian, thank you for giving it everything you had. Thank you for treating this place with the care and love it deserves, for leading by example, and for helping bring the family back together.

Wishing you nothing but the best in whatever comes next, bud. You’ll always be part of the family.

And thank you for teaching Diego yesterday that muscles aren’t everything 💪
