Spirulina {Kelpie}
A microscopic blue-green algae that’s been around for 3.5 billion years, making it one of the oldest organisms on the planet. It grows in warm, highly alkaline lakes, often near volcanoes, and was first cultivated by the Aztec empire in lakes like Lake Texcoco as a source of protein. In our cocktails, it lends that natural, vibrant blue hue, plus a healthy dose of B vitamins and antioxidants.

Snap Pea {Garden City}
We juice fresh snap peas with a masticating juicer, which slowly crushes rather than blends, so no heat is introduced and the flavour and colour stay true to the pea. After straining, we add a touch of sugar for sweetness and citric acid to keep that colour stable.

Mushroom {Stellar’s Jay}
A blend of local BC mushrooms, wood ear, oyster, shiitake, and porcini, dehydrated to concentrate their flavour, then chopped and combined with blueberry, thyme, cedar, and lemon peel. This forms the base of our house soda, used in both the Stellar’s Jay and Long Lost.

Espresso {Café de Olla}
Pulled fresh in house every day for all our coffee cocktails, including the Café de Olla, Run Wild, and Espresso Martini. We work with local roaster 49th Parallel Coffee Roasters for the beans.

Key Lime {Key Lime Pie}
Imported directly from the Florida Keys via Nellie and Joe’s, exporting key lime juice since 1968 and the classic behind key lime pies everywhere. It’s more aromatic and floral, and less acidic than regular lime, with that unmistakable key lime pie flavour.
