No “vegetarian option.”

Just a dish everyone wanted.

For P & Z’s wedding at the UBC Boathouse, the menu called for an appetizer that could work for everyone at the table. Vegetable & Coconut Bisque was the answer — rich, comforting and full of flavour.

The rest of the menu followed with the same idea: thoughtful dishes, different choices, and a dinner that felt cohesive from beginning to end.

For a guest, choosing between three entrées feels simple. Behind the scenes, serving multiple options takes careful coordination, timing and attention to every detail.

For this recent wedding at VanDusen Botanical Garden , nearly 100 guests enjoyed a plated dinner with three entrée options, including a vegetarian option. Each plate had to be finished at the right moment, with the right details, and make its way to the right guest.

Here, Franco, our Chef de Partie, puts the finishing touches on a plate just before service.
