Small-scale farmers are critical in the production phase, with the industry relying heavily on these vulnerable populations for the quality and sustainability of the crops
The connection of Dolores with coffee started with a couple farms over a hundred years ago. Coffee used to grow in these farms almost naturally, it was just a matter of throwing some seeds and a few years later the farmers would have mature trees producing the characteristic cherries. They would remove the outer skin by hand, wash the mucilage out with water and after drying it, they would pack the beans in burlap bags and sell them to traders.
Over time the community noticed the high value of this product, how rain cycles, soil conditions and appropriate use of fertilizers would determine the success and quality of the yields. With more precise processes, from the moment seeds were planted all throughout the maturity of the plant, and when harvesting, depulping and fermenting, the coffee from Colombian growers took fame all over the world for its high quality and unique profile.
