At Crab Hot Lau, our broths are built over many hours, slowly developing layers of flavour from a careful combination of spices, aromatics, and patience.

No MSG. No shortcuts.

Cherry is the kind of founder who is everywhere because she has to be.

From one Crab Hot Lau location to the next, she is constantly moving. Checking in. Tasting. Adjusting. Making sure every bowl, every broth, and every detail lives up to the standard she has built for Crab Hot Lau.

As founder and head chef, there is no part of the business she doesn’t care about. Three locations. One vision. And countless hours spent making sure the food and experience remain true to the Northern Vietnamese flavours and Hải Phòng roots at the heart of the restaurant.

There is always another location to visit. Another dish to check. Another standard to uphold.

Because behind every successful restaurant is someone who refuses to settle.

And for Crab Hot Lau, that person is Cherry.

Nem Cua Biển - our Square Crab Spring Rolls - are ordered at nearly every table, and once you bite in, you’ll understand why. A golden square shell cracks open to a rush of BC Dungeness crab meat, shrimp, pork, and shiitake - packed tight, bursting warm, nothing wasted.

Hand-wrapped in the traditional square rice-paper shell the way it’s always been done in Hải Phong. Fried to a deep, even gold. The kind of crisp that gives way all at once.

This is the taste of a seafront city - the one where this recipe was born, carried here, and made with the best crab the BC coast has to offer. Dipped in our homemade fish sauce.

There are bowls that comfort, and there are bowls that tell the story of a place.

Bún Cá Hải Phòng is one of Northern Vietnam’s most beloved specialties. A vibrant broth, gently simmered from tilapia bones and heads, is layered with the bright acidity of tomato and tamarind, creating a delicate balance of tangy, savoury, and just a touch of spice.
Each bowl is finished with crispy fried tilapia, handmade fish cakes, tender taro stem, fragrant dill, scallions, and white onions. Every ingredient has its place, coming together in a bowl that feels both nourishing and deeply satisfying.
