Living on the West Coast, we’re incredibly lucky to work with fresh catch from British Columbia’s waters, shaped by seasonality, terroir, and the people who understand the rhythm of the coast better than anyone else. Sustainability isn’t just part of the conversation; it’s part of the responsibility.

Spot prawn season is one of the moments we wait for all year.

At Five Sails, Chef Alex Kim’s new seasonal features celebrate the sweetness and delicacy of BC spot prawns through a menu shaped by precision, restraint, and the flavours of the coast.

From spot prawn crudo with yuzu kosho vinaigrette to a deeply layered lobster bisque and grilled spot prawns finished with beurre blanc, fermented chilli, and caviar, each course is designed to let the ingredient speak for itself.

The Altitude: BC Spring is designed as a climb, beginning at the coast with bright, clean flavours from the Pacific, then moving inland into deeper, warmer, and more grounded dishes inspired by BC’s valleys, forests, and alpine regions.

Inspired by Chef Alex Kim’s travels through Peru, where ingredients and cooking techniques shift with elevation, this menu brings that same perspective home. Each course reflects a different part of the province, not just in ingredients, but in how it’s prepared, how it evolves, and how it feels throughout the evening.

It doesn’t look like what you expect, and that’s the point.

Part of The Altitude: BC Spring, this course explores the colder, deeper waters of the Pacific. Albacore tuna is lightly seasoned with gochujang for a gentle warmth, then topped with Kaluga caviar and served with crisp Kennebec potato chips to break over each bite at the table. 

Paired with Baptism by Firetruck cider from Truck 59 in Kelowna, BC, it’s a course that feels playful, unexpected, and distinctly West Coast.

One of the first signs that spring has arrived on the West Coast.

Our halibut course is part of The Altitude: BC Spring, Chef Alex Kim’s new tasting menu inspired by a journey through British Columbia.

Fresh Pacific halibut is served with charred peas, spinach, and a light shio koji broth that brings out the natural sweetness of the fish without overpowering it. Paired with the 2022 French Door Reserve Chardonnay from the Okanagan Valley, it’s a course that feels unmistakably of this place: clean, coastal, and quietly expressive.

A tasting menu that takes you on a journey through British Columbia.

Our new menu, The Altitude: BC Spring, begins at the Pacific coastline and slowly moves inland, from cold ocean waters and spring vegetables to the deeper, more rugged flavours of BC’s mountains.

Inspired by a recent trip through Peru, where Chef Alex Kim saw how dramatically ingredients and cooking change with elevation, this menu brings that same idea home. Each course follows a different part of British Columbia: the coast, the valleys, the interior, and finally the alpine.  

You’ll begin with Pacific oyster, seaweed, shrimp, and albacore tuna. From there, the menu moves into Fraser Valley chicken, spring lamb, braised beef cheeks, and finishes with wild berries, spruce tip, and wildflowers, a reflection of spring across the province.  

This is British Columbia, course by course.
