A promise kept.
During my very last conversation before her passing, I asked Cô Thành what dish she dreamed of collaborating on for our Toronto opening. Her answer was immediate: Bún Mắm. It was her personal favourite.
She never got to see it come to life, but today, we honour that final wish. This is the conversation we never got to finish, served with all the heart she left behind.

Fermented fish stock • Prawns • Baby octopus • Eggplant • Manila clams • Hokkaido scallops • Crispy pork belly • Served with a fermented tofu garlic rouille.
We honoured her authentic core and elevated it with the finest ingredients, pushing the cuisine exactly where she entrusted us to take it. 🤍
