Crafted with Hennessy VSOP, eau de vie brandy, pyrolized mango and barrel-aged banana, โ€˜CALDERAโ€™ is a beautifully boozy and fruity cognac cocktail that plays with fire and smolders with intrigue.

Volcanic lands taught humanity that endings seed beginnings โ€” flames always coax life from dormant seeds. Here, fire isnโ€™t intended as chaos but more so a catalyst for new beginnings. As the tiny sparks subside into ghostly embers, raise the crimson cup from its nest and savour slowly.

A heartfelt thank you (and big bear hug!) to Chef Jesse McCleery of Galiano Islandโ€™s Pilgrimme for joining us to craft a magical night overflowing with joy, laughter and an electric 8-course menu that bridged Peruvian fire ๐Ÿ”ฅ with Pilgrimmeโ€™s coastal forest poetry ๐ŸŒฒ โ€” a feast that left us spellbound (and yes, weโ€™re still dreaming about every single course that left the pass ๐Ÿ˜Œ).โ€
