Mornin'! Let's talk matcha...

Not all matcha is created equal, and we should know, in 2026, not to judge based on colour, so here are some fun facts:
Many factors affect the colour of matcha - region, climate, harvest time, type of processing, and many others;
- spring vs summer harvest changes not only the colour, but also the flavour profile, richness, chlorophyll and nutrient levels, just to name a few;
- warmer/cooler regions, roasted or steamed, all makes a huge difference in the final product.
I use my matcha for not only delish drinks, but also tasty treats, fillings, chocolates, cakes, (you name it), and as I bake from scratch, I need a matcha that can do some heavy lifting!
Thus...the summer harvest, organic Shizuoka culinary grade powder was the best choice. It is harvested later and with a shorter shading period which reduces chlorophyll production (less green), has higher catechins/antioxidants (which is healthier!), has a deeper/earthier flavour, with a slight bitterness from roasting instead of more delicate steaming (think regular coffee vs espresso beans), and can withstand heat better for steamed milk drinks, as well as moderate oven temperatures.
So, just like a lot of things, context matters.

Pop in and try one, hot or iced, grab a sweet, listen to some great tunes on vinyl, and enjoy the last few days of your favourite café!
