🍂 A little recipe testing happening in the kitchen today!

Along with getting a head start on this week’s market prep, I decided to experiment with a new fall flavour.

Today’s test is Spiced Pumpkin Chocolate Chip Scones, made with real pumpkin purée, warm fall spices, semi sweet chocolate chips and our fresh milled blend of organic soft red wheat, spelt and Red Fife.

I’ll be baking up a couple to see how they turn out and whether they’re good enough to earn a spot on the market table!

I’d love to squeeze in one more new flavour before market season comes to an end, so we’ll see if these make the cut. 🍂

After three days of pretty much nonstop rain, we’re getting ready to head to Trenton Station Fresh & Local Market from 11 AM to 2 PM today with a table full of fresh baking!

And if you’d rather stay warm and dry at home, we’ve got you covered. ❤️

We’re offering $5 delivery to Trenton, New Glasgow, Stellarton and Westville today after the market!

🥯 I’D LOVE YOUR INPUT!

With our local market season starting to wind down over the next few weeks, I’ve been thinking a lot about what ordering from Honey Blue Homestead Kitchen will look like once the markets are finished.

Our last Pictou Farmers Market is September 23, and our last Trenton Station Fresh & Local Market is October 4, but I definitely want to keep baking for you after market season!

Originally, I was thinking about choosing pickup locations in different towns on certain days. You would preorder what you wanted and meet me at the scheduled location to pick it up.

But lately I’ve been wondering if home delivery would actually be more convenient.

One possibility would be having 2 or 3 designated days each week, with different towns or areas on different days, and offering local home delivery for around $5. Pickup here in West River Station would still be available as well.

Before I decide how to set everything up, I want to hear from YOU because I want to offer whatever will actually work best for the people ordering from us.

Which would you be most likely to use?

These fresh milled bagels haven’t been part of our regular market menu, but I’ve been thinking they could be a great addition to the pickup and delivery menu after market season if there’s enough interest.

🫐 WILD BLUEBERRY SCONES

These have become one of our market favourites, and they have a habit of selling out!

Our Wild Blueberry Scones are packed with unsprayed wild blueberries handpicked right here on our homestead and made with a fresh milled blend of organic soft red wheat, spelt and Red Fife.

Real butter, sour cream and heavy cream make them rich and tender, while fresh lemon zest complements all those wild blueberries. Then each one is finished with a sweet vanilla glaze.

And as you can probably tell from the picture, we definitely don’t skimp on the blueberries! 🫐

We’ll have them with us today at the Pictou Farmers Market from 4 to 7 PM, along with our Maple Pecan Scones.

Our scones often sell out, so if you want to be sure yours are waiting for you, you can preorder ahead.

🐔 Look who just joined the homestead!

We finally added laying hens, and I’m pretty excited about what this will eventually mean for Honey Blue Homestead Kitchen too.

Once these girls start laying, we’ll be able to use our own free range eggs in our baking. One more ingredient produced right here on our homestead. ❤️

For now, they’re settling into their new home and we’re waiting for that first egg. 🥚

Anyone want to guess how long they’ll make us wait? 😂

How local can one sandwich get? 🥪

This one came pretty close!

The chicken was raised and processed right here on our homestead, the fresh dill came straight from our garden, and those beautiful yellow tomatoes are Lemon Boy tomatoes from Elmbrook Acres - Market Garden who also attends both the Pictou Farmers Market and the Trenton Station Fresh & Local Market. We’d never tried this variety before, and they were delicious! 🍅

And of course, it’s all piled onto our oatmeal molasses bread, made in our kitchen with freshly milled organic grains, organic oats, molasses and local unpasteurized honey from Swinkels Bee Products.

If you’ve only thought of oatmeal molasses bread as something to toast with a little butter, you’re missing out. It makes an amazing sandwich too! The slightly sweet, hearty bread was so good with the chicken, fresh dill and Lemon Boy tomatoes.

🫐 WILD BLUEBERRY EDUCATION SERIES — EPISODE 4

How many individual blueberry plants do you think you’re looking at in this photo? 🫐

Dozens? Hundreds?

The answer might surprise you, because what looks like a whole bunch of separate little blueberry bushes above ground can actually be connected as ONE plant underneath the soil.

Wild lowbush blueberries spread through underground stems called rhizomes. As those rhizomes spread, they send up new shoots. All of the shoots connected to the same underground system are genetically identical and together form what’s called a clone.

But that doesn’t mean a wild blueberry field is one giant plant.

Far from it.

Wild blueberry fields are actually a patchwork of many genetically different clones growing right alongside one another.

And here’s where it gets really interesting…

Those genetic differences can show up in the plants themselves. One patch can have berries and leaves that differ in size, shape and colour from another patch nearby. As the season changes, the differences can become even easier to see when different clones turn different shades of red.

So when you walk through a wild blueberry field and notice that the berries suddenly look a little bigger, smaller, lighter or darker, you may actually have stepped into a completely different blueberry clone.

All while, underneath your feet, those plants are spreading sideways through a hidden network of rhizomes.

Wild blueberry fields are a lot less uniform than they look. 🫐

The bread is bagged, the crates are filling up, and we’ll be at the Fairview Farmers' Market today from 4 to 7 PM.

We’re bringing plenty of our fresh milled Oatmeal Molasses Bread and Sandwich Bread, along with scones, cookies, blondies, brownies, dinner rolls, croutons and fresh wild blueberries. 🫐

🍫 The story behind our Midnight Triple Chunk

Of all the recipes on our menu, this is the one I spent the most time developing.

I had a very specific cookie in mind. I wanted it thick, rich and made for someone who REALLY loves chocolate.

I was especially intrigued by black cocoa. It has such a distinct, deep flavour and isn’t something you see in cookies very often, so I started experimenting. I tried black cocoa on its own, played around with combining it with regular cocoa, and eventually landed on just the right balance of black cocoa and Dutch processed cocoa.

Somewhere along the way I decided to experiment with adding a little espresso, and I was blown away by how much it enhanced the chocolate flavour. It doesn’t make the cookie taste like coffee. It just makes the chocolate taste even more intensely chocolatey. And that’s coming from someone who doesn’t even like coffee! 😂

Then there’s the chocolate.

There isn’t a single chocolate chip in these cookies. Each one is loaded with dark, milk and white chocolate bars that I hand chop into chunks before adding them to the dough. 🍫

The flour is freshly milled right here in our kitchen from a blend of organic soft red wheat, spelt and Red Fife. They’re sweetened with brown sugar that I make myself from organic cane sugar and molasses, along with a touch of honey.

It took a month or two of experimenting, adjusting and baking batch after batch before I finally had the cookie I’d been picturing.

Thick. Soft. Deeply chocolatey. And absolutely loaded with chocolate.

If you’re a serious chocolate lover, this one was made for you. ❤️
