50 years ago, as a child, I remember how my parents regularly roasted their coffee beans with standard kitchen tools and a drum roaster. I could still smell the incredible aroma which used to fill the entire house. Then the following each day the beans were freshly ground, with a hand held grinder, and consumed immediately. We are all fresh obsessed consumers. We naturally look for fresh bread, fresh produce, fresh fish, fresh cold water, fresh muffins, fresh pizza, but when it comes to drinking coffee we generally do not look for freshness and allow ourselves to drink flavourless, dull, stale and less vibrant coffee. Have you considered the following? Do you know that coffee has a life span? Do you know that coffee oxidizes? Do you know that coffee begins to deteriorate right after roasting? Do you know that by storing coffee in the fridge or freezer makes it even duller tasting? Do you know that ground coffee is even more fragile and it begins to deteriorate during 20 minutes to an hour? Do you realize that 98% of a cup of coffee is water? Do you know that, for brewing, water temperature must be around 200F, and most plug-in coffee brewers don’t heat the water sufficiently for optimum brewing; therefore grounds do not fully saturate and the most delicious flavours from the coffee is left out?
