LEGENDS IN THE HOUSE.

When I worked at The Fat Duck, there were a handful of chefs we all paid attention to.
One of the pre-eminent ones for me was Wylie Dufresne.

While everyone on that list was doing incredible things, what makes Chef Wiley special is that he did it from a North American standpoint in a way that feels completely his own.

There’s a playfulness to his food that really struck a nerve with me early on. It is something I still carry with me today.

He showed me that if I am having fun cooking and creating it, the diner will have fun eating it.It is not just about making a tasty plate of food. It is about creating an experience. There is a story. There is real artistry behind it.

Dishes like hot mayonnaise might not sound revolutionary, but he went against the grain. He went against the physics. He changed the game with something that simple.

I had the chance to experience Michael Cimarusti’s cooking years later, and it left a lasting impression on me.

I remember eating at . East Coast seafood in West Hollywood. No compromise. The food is honest, high quality, and perfectly executed without being pretentious.

I was sitting there, taking in the room. I was actually sat next to Michael Douglas and we ended up bonding over uni!

He created a space where casualness meets precision in a way that really stayed with me.

They are very different chefs, but alike in the way that matters most: Intention, care, and a clear point of view.

To have them both come through Patois, to cook for them, to talk ideas, to share what we are building here….As a young cook, you read about chefs like this. You study them. You try to understand how they think.

You do not really imagine the day they are sitting in your dining room, enjoying your food.

This was a moment I will never forget.
